Relax and Sleep

Good sleep will help calm fear and anxiety, but anxiety can keep you from good sleep.  More about fear and anxiety later, but for now try this to relax into a better sleep.

1. Sit or lie comfortably. Focus on a spot on the wall or ceiling and slowly count to 20. Let your eyes close.
2. Take a deep breath. Imagine breathing in peace and calm. Feel your chest and belly rise. Breathe out slowly. Blow out the tension. Relax your chest and belly.  Repeat 3 times.
3. Close your eyes tightly and then relax the muscles in your eyelids. Continue to relax the muscles in your face, neck, shoulders, arms, chest, torso, legs, feet, toes. Feel limp.
4. Imagine yourself going down an escalator, counting from 20 to 1. Now you’re very relaxed. Optional: If you’d like enjoy a mini-vacation in your favorite spot – the beach, mountains… use your imagination and visualise the details.  Feel the breeze, the ocean air, hear the seagulls and the waves…
5. Now count to 10 as you go back up the escalator and then open your eyes.

Do this a couple of times a day to relax. Sleep should come easier.

Simmered or Refried Beans

Simmered or Refried Beans
First prepare these simmered beans:

2 cups dried beans (pinto, black, or pink), washed
1 onion, peeled and chopped
1 bay leaf
Place the above ingredients in 8 cups of water and bring to a boil. Reduce heat to low. Simmer for 1 to 1 ½ hrs.
Remove bay leaf, add ¼ t salt and cook 15 minutes longer.

Heat 1 T vegetable oil in frying pan; add 2 cloves finely chopped garlic. Cook 1 minute. Stir in 3 cups of simmered beans with broth. Cook and stir, mashing beans lightly with a fork until bean mixture is a thick paste, but not dry. Add more broth as needed.  Can store simmered or refried beans for 3 days in a  refrigerator in a glass or plastic container.

Energizing Veggie Drink

Energizing Veggie Drink:

Tomato (2-3 medium)
Cucumber (1 small or 1/2 large)
Celery  (2-3 stalks)
Sweet peppers (green, red, yellow or orange-1 large or 2-3 small)
Carrots  (handful of baby carrots – large bag of organic carrots available at Sam’s Club)
*Spinach (other dark green leafy vegetables can be substituted)

(save time and money by using frozen spinach – Trader Joe’s has organic frozen spinach for less than $2)

Put all of this in a blender that makes whole juice (Blendtec has a “whole juice” button on it. I love mine, it’s one of the best investments I’ve ever made.)

Other heart healthy ideas:

Use 100% Virgin Olive Oil instead of butter on top of potatoes, sweet potatoes and toast. Sprinkle with a little *sea salt. Olive Oil has Omega-3′s - the healthy cholesterol(HDL)  Lousy cholesterol is LDL. Omega 3′s are also known as mood boosters.

Guacamole or sliced avocado is delicious on top of a baked potato.  This also has Omega 3.
Put cinnamon on top of your “oiled” toast – it has a lot of health benefits and tastes great.

*Sea salt seems to be stronger than regular salt so I use less.
